Savory Corn Upside-Down Cake

Cheesy Vegeable Topping

Ingredients

  • 1½ cup (185 g) corn
  • ½ cup (80 g) onion, peeled, diced
  • ¼ cup (60 g) roasted red pepper
  • ¼ teaspoon ground sage
  • ¼ teaspoon ground thyme
  • ½ teaspoon salt
  • 1 cup (110 g) Pepper Jack cheese, shredded
  • 1 large egg
  • ¼ cup (60 ml) milk
  • 2 Tablespoons all-purpose flour

Directions

  1. In a medium bowl stir together vegetables, herbs, salt, and cheese.
  2. Place egg, milk and flour into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 5.
  5. Blend for 10 seconds or until desired consistency is reached.
  6. Pour over the vegetable mixture and place into a parchment-lined 9-inch (23 cm) pan. Spread out evenly.

Corn Cake Batter

Ingredients

  • 1 cup (120 g) cornmeal
  • ¾ cup (95 g) all-purpose flour
  • ½ teaspoon salt
  • 1½ teaspoon baking powder
  • ⅔ cup (160 ml) low fat buttermilk
  • 3 large eggs
  • ¼ cup (55 g) unsalted butter

Directions

  1. Combine cornmeal, flour, salt, and baking powder in a bowl. Stir by hand.
  2. Place buttermilk, eggs, and butter into the Vitamix container and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 5.
  5. Blend for 10 seconds or until desired consistency is reached.
  6. Pour egg mixture into bowl with flour mixture and stir by hand to incorporate.
  7. Gently pour batter over top of the vegetable mixture and spread evenly with an offset spatula.
