Vitamix refreshments are a cool break from the summer heat.

Ginger Peach Cheesecake Ice Cream

Ginger Peach Cheesecake Ice Cream
  • 1 container low fat peach yogurt
  • 1 tsp. ground ginger
  • 1/2 tsp. ground cinnamon
  • 1/2 block of fat-free cream cheese
  • 16 oz. frozen peaches
  • 3 large graham crackers, broken into small pieces

Place all ingredients in the Vitamix container in the order listed. Secure 2-part lid. Select VARIABLE speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Remove the lid plug and insert the patented Vitamix tamper through the lid opening to press the ingredients into the blades while the machine is processing. Run for 30 - 40 seconds or until four mounds form. Watch your mixture carefully ­ running the machine longer does not make it more frozen. Serve immediately or place in an airtight container in your freezer until service.

Yield: 8 servings (1/2 cup each)

Mint Chocolate Chip Frozen Dessert

Mint Chocolate Chip Frozen Dessert
  • 1 cup (240 mL) heavy whipping cream
  • 3 cups (720 mL) 2% milk or Half & Half
  • 1/3 cup (80 mL) powdered milk
  • 1/4 cup (60 mL) reduced fat cream cheese
  • 1 cup (240 mL) sugar
  • 1/4 tsp. mint extract
  • 1 drop green food coloring (optional)
  • 4 York® peppermint patties (small size)

Place cream, milk, cheese, sugar and green food coloring in the Vitamix container. Secure lid. Select VARIABLE SPEED #1 and quickly increase speed to #10; then to HIGH. Blend for 1 minute. Decrease speed to #5 and drop in mint patties. Run for 5 - 10 seconds just to chop and blend. Do not overmix. Pour into a 4" x 8" (10 cm x 20 cm) bread pan and place in freezer. When frozen, remove from pan and roll in crushed chocolate cookies. Slice to serve.

Strawberry Shake

Strawberry Shake
  • 1 cup (240 ml) fresh or frozen strawberries
  • 1/2 cup (120 ml) vanilla nonfat frozen yogurt or ice cream
  • 1 tbs. sugar or other sweetener, to taste
  • 1/2 cup (120 ml) low fat milk
  • 1/4 cup (60 ml) ice cubes

HINTS: Substitute strawberry frozen yogurt (or ice cream) for vanilla nonfat frozen yogurt (or ice cream).

Place all ingredients in the Vitamix container in the order listed. Secure 2-part lid. Select VARIABLE speed #1. Turn machine on and quickly increase speed to #10; then to HIGH. Allow machine to run for 10 to 15 seconds.

Time: 10 to 15 seconds
Yield: 1 3/4 cups (420 ml)

Honeydew Sorbet

Honey Dew Sorbet
  • 8 oz. Melon Liqueur
  • 16 oz. Frozen Honeydew melon
  • 4 oz. ice cubes

Place all ingredients in the Vitamix container in the order listed. Secure 2-part lid. Select VARIABLE speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Remove the lid plug and insert the patented Vitamix tamper through the lid opening to press the ingredients into the blades while the machine is processing. Run for 30 - 40 seconds or until four mounds form. Watch your mixture carefully ­ running the machine longer does not make it more frozen. Place in an airtight container in a freezer for at least one hour prior to service.

Yield: 8 servings (1/2 cup each)
